Liz makes oatmeal peanut butter cookie bars

Yesterday, I made these amazing cookie bars. They're made with peanut butter and oatmeal (and tons of sugar) and they're absolutely delicious! I slightly adapted the recipe from The Girl Who Ate Everything. You have to try these cookie bars!

Bars:
  • 1/2 cup granulated sugar
  • 1/2 cup peanut butter
  • 1/2 cup butter
  • 1 egg
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1 cup quick oats

  • Preheat oven to 350 degrees. Cream together egg, sugar, peanut butter and butter. Then add flour, baking powder and quick oats. Press into a 9x13 pan lightly sprayed with cooking spray.
    Bake for 15 minutes or until the edges are lightly browned. Let cool completely. (Also, look at that adorable pot holder my mom made me!)
    While the cookie bars are cooling, you can make the frosting!
    For the frosting:
  • 1/4 cup butter, softened
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla extract
  • 2-3 Tablespoons milk
  • 1 1/2 cups powdered sugar

  • Mix all of those ingredients together. You might not need all the milk, so add it in slowly.
    After the bars have cooled, frost them!
    And cut them into squares!
    Oh, and then eat them! Enjoy!

    2. Chocolate adn Peanut Butter are two of my food weaknesses.....DANG!! these look so good!! I wonder if they would be as tasty with Nutella frosting.
