Today when I came home from class, I really wanted something sweet. I was excited because I knew we had everything it took to make cookies.. or so I thought. We are almost out of butter! Which never happens, by the way. I'm a butter fanatic. I found a recipe online that used vegetable oil instead, which is perfect because we have a butt load of oil. I changed the recipe a tad and this is what I came up with. I was skeptical at first to say the least, but these turned out amazing! I think I'll make my cookies this way all the time!
Recipe yields 18-20 cookies
Ingredients:
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon nonsweetened cocoa powder**
3/4 cup granulated sugar
1/2 cup vegetable oil
1 large egg
1 teaspoon honey
1 cup semi-sweet or milk chocolate chips
1/4 teaspoon salt

Preheat oven to 350 degrees F. Stir together flour, baking soda, salt and cocoa powder then set aside. In a separate bowl, mix sugar, oil, egg and honey. Add in flour mixture to oil mixture a little at a time until well incorporated. Fold in chocolate chips.
With an ice cream scooper, scoop dough and roll it into a ball between your hands. Place on cookie sheet and slightly flatten with your fingers.
Bake on an ungreased baking sheet for 8-10 minutes or until done.
**Just noting that the small amount of cocoa powder isn't necessarily added for the taste, but more for the color. Without it, the cookies will be much whiter, but still delicious.
The cookie texture is really amazing. It's soft and chewy like store bought cookies -- but better! I must warn you though, they're pretty sweet, but that doesn't bother me too much. They're honestly the best cookies I've ever made. No joke!

I love chocolate chip cookies! I never used honey, I shall try :) When I do cookies, I like to had a little cornstarch so they get fluffy :)

If you want to blow your mind even more next time use 1/3 cup of applesauce instead of the egg, use semi sweet chocolate chips, and leave out the honey. The cookies will be surprisingly delicious and vegan friendly! :)

Instead of butter I always use Crisco and it keeps the cookies fluffy. I love how having a simple substitution can change everything.

OMG YUMMY!!! My Jason's Mémère makes the best cookies. Also in my speech class (I had to take during my Undergrad) a gal in my group was vegan and made us all vegan chocolate chip cookies (it was part of her how-to speech). Her vegan cookies were amazing so I know just how good these cookies are! (Well being vegan she didn't have the egg but it's all good when chocolate is involved)!!

ReplyDeleteJust made two separate batches... The first one turned out great! Flattened a bit, perfect. The second one I used a blend of Truvia/Sugar, didn't flatten out. Not sure why?! I must say a cup of chocolate chips was a bit much for the first batch, so I cut back by 1/2 a cup. I used white whole wheat flour. Overall, tastes great!
ReplyDeleteI'm so glad you tried it! I bet you're the first one besides me. Yeah, I always tend to put a little too much chocolate chips -- my boyfriend and I love them. I'm sorry the second batch didn't turn out so well. I've made these quite a few times now and one time I mixed the batter differently than listed and they turned out horrible. But baking is tricky.. Even if you follow all of the directions something can always go wrong, unfortunately. Or maybe that's just me. ;) Thanks again for letting me know how they turned out! Glad you enjoyed them.

I'm not exactly sure what you're asking. I think you're aware that I've substituted oil for butter. I didn't "change" anything, because there was no other recipe to change.

ReplyDeleteHi Liz....I was looking for a choco chip cookie recipe (in part to eat the dough!!) with out marg/butter, and I came upon this recipe and your blog, and so far, i have to admit I am not impressed. They are not dough-like at all, and they wouldn't even stick together until I added some more veg oil. They definitely are not sleep-over dough cookies :( I hope they are better after they are cooked?
ReplyDeleteWell, I tried to make these cookies On saturday, and they turned out horrible. I am now trying ot bring them to life by adding margarine to them. I couldn't even roll them together to bake them. And I did bake a few, but they just broke in my hands.
ReplyDeleteHi there. I'm not sure what happened, but many people have tried this recipe and have had success. Even my own family! I'm really sorry they didn't turn out for you. I've heard before that elevation or climate might affect the way your baked goods turn out, and if that's the case then I'm sorry. Double check if you added enough flour or some other ingredient. Again, I'm sorry. If you look at comments above, you can see all of the success.
