Lately, I've been on a bit of a health kick. I've been trying to come up with low calorie but still delicious foods. Now, before this diet, I hated salads. I thought salads existed to make people sad. After trying this salad, I've had a complete change of heart. This salad is yummy, satisfying and only has 191 calories for a whole plate full! Let me tell you what's all in it.
Ingredients:
2 cups romaine
1 cup baby spinach
1/4 cup black beans, warmed
1/4 of an avocado, chopped
1/8 cup sharp cheddar cheese, reduced fat
2 tablespoons salsa
You might be thinking, "salsa as salad dressing?" But trust me, it was delicious and blended with the black beans, avocado and cheddar nicely. It was almost like eating a vegetarian taco without the shell. Plus, two tablespoons of salsa is only 10 calories! Compare that to ~145 calories for ranch dressing.
Also, keep in mind that a little sharp cheddar cheese goes a long way. You don't need a lot for a big flavor-punch.
Of course, you can make your salad however you want, but this is what I had on hand. Feel free to use what you have, such as quinoa, bell peppers, tomato, chickpeas, broccoli, cucumber, etc. Yum!

ReplyDeleteBut it gets tricky, doesn't it? I used to load up the cheese and the ranch thinking I was doing myself good. Sucks.
