Liz makes orange creamsicle cupcakes

My awesome mom visited me this week, and last night we made cupcakes and watched Love Actually. Best visit ever, right? Well these cupcakes weren't just any cupcakes; they were orange creamsicle cupcakes. Have you ever had one of those orange creamsicle popsicles? Well, these were like those, but better and in cupcake form. Here's how we made them and how you can too:

Ingredients
For the cupcakes:
1 white cake mix
3 eggs
1 1/3 cup heavy whipping cream
1/2 cup vegetable oil
1/2 packet of orange kool-aid
1 teaspoon of orange extract

For the frosting:
1 bag of powdered sugar
1/2 packet of orange kool-aid
1/3 cup butter
water (about 1/2 cup or slightly more)

You'll also need some of those candy orange slices, one for each of the tops of the cupcakes.
Preheat the oven to 350 degrees. Mix the cake mix, eggs, whipping cream, vegetable oil and orange extract in a bowl.
Then mix half of the orange kool-aid packet in. It will only be slightly orange, which is okay.
Now, place some cupcake papers in a cupcake pan and fill them up 3/4 of the way.
Bake for 20 minutes or until done.
While they're baking (or while they're cooling), you can make the frosting. Mix the butter, 1/2 bag powdered sugar, 1/2 packet of orange kool-aid and 1/2 cup water. Add remaining powdered sugar a little at a time and more water as needed.
Put the icing in a ziploc baggy and snip off a corner.
Frost the cupcakes! The best part!
Place a candy orange slice on top of each cupcake.
My mom even got these cute cupcake boxes and we wrapped them in a bow. How fun is that?
They were probably the best cupcakes I've ever had, no joke guys.
Well have a great weekend everyone. :)
